Wild Garlic & Chickpea Pancakes

What is it about savoury pancakes? They seem to go down a storm in our house. These fluffy wild garlic & chickpea pancakes are perfect for a quick lunch or savoury snack. These are great to make on the weekend to enjoy throughout the week.

Ingredients (for about 7 pancakes)
1 cup chickpea flour
1 cup water
½ cup milk
1 large handful wild garlic (washed & finely chopped)
½ tsp cumin
½ tsp turmeric
½ tsp baking powder
Pinch of salt & generous black pepper
Method:
Mix everything in a bowl and let it sit for 10 minutes.
Heat a pan with a little coconut oil over medium heat. Use 1/2 tsp per pancake.
Cook until golden, flip, and cook the other side.
Store in a glass container for up to a week or freeze for later.
I always feel these are best enjoyed warm, especially after being in the fridge.
Enjoy alongside guacamole like this one.
Ingredients:
2 ripe avocados
Juice of ½–1 lime
Small handful of fresh coriander (optional)
1 small garlic clove (or a little wild garlic if you have it!)
Salt & pepper to taste
Optional: finely chopped red onion or chilli
Method: Mash the avocados in a bowl to your desired texture (chunky or smooth). Stir in the lime juice, garlic, and seasoning. Add any extras you like and mix gently.
Taste and adjust; more lime or salt can really bring it to life.
