Wild Garlic & Chickpea Pancakes

What is it about savoury pancakes? They seem to go down a storm in our house. These fluffy wild garlic & chickpea pancakes are perfect for a quick lunch or savoury snack. These are great to make on the weekend to enjoy throughout the week.

Wild Garlic & Chickpea Pancakes

Ingredients (for about 7 pancakes)

  • 1 cup chickpea flour

  • 1 cup water

  • ½ cup milk

  • 1 large handful wild garlic (washed & finely chopped)

  • ½ tsp cumin

  • ½ tsp turmeric

  • ½ tsp baking powder

  • Pinch of salt & generous black pepper


Method:

  1. Mix everything in a bowl and let it sit for 10 minutes.

  2. Heat a pan with a little coconut oil over medium heat. Use 1/2 tsp per pancake.

  3. Cook until golden, flip, and cook the other side.

  4. Store in a glass container for up to a week or freeze for later.


I always feel these are best enjoyed warm, especially after being in the fridge.


Enjoy alongside guacamole like this one.

Ingredients:

  • 2 ripe avocados

  • Juice of ½–1 lime

  • Small handful of fresh coriander (optional)

  • 1 small garlic clove (or a little wild garlic if you have it!)

  • Salt & pepper to taste

  • Optional: finely chopped red onion or chilli


Method: Mash the avocados in a bowl to your desired texture (chunky or smooth). Stir in the lime juice, garlic, and seasoning. Add any extras you like and mix gently.

Taste and adjust; more lime or salt can really bring it to life.
