Wild Garlic & Pea Soup

This Wild Garlic & Pea Soup is a seasonal twist on one of my favourite recipes: Pea & Mint Soup. The addition of wild garlic pairs beautifully with the peas, creating a delightful spring soup that can be savoured with crusty bread and cheese.

Ingredients:
3 healthy handfuls of washed wild garlic
1 large bag of peas
3 chunky cloves of garlic
1 large red onion
1 jar of stock (mine was homemade - probably around 500ml, but @frejafoods and @boroughbrothcompany do great pre-made stocks.
A dash of cayenne pepper
Salt and pepper to taste
Olive oil or coconut butter for sauteeing,
Method:
Start by mincing the garlic to release its beneficial compounds - Allicin! Peel and chop the onion, then sauté it with coconut butter or extra-virgin olive oil for a few minutes before adding the minced garlic.
Once the garlic is golden, add peas, wild garlic, stock, salt, pepper, and cayenne pepper. Add water if needed to cover the veggies, then cover the pan, bring it to a boil, and simmer on medium heat for 5 minutes.
Let the mixture cool, then blend in a Magimix until the desired texture is achieved. I like mine more chunky than smooth.
Heat the blended soup in another pan until bubbling, adding in additional water, salt or pepper if needed.
Serve warm with a herb garnish, some grated cheese and crusty bread with preferred butter. For additional protein, enjoy with meatballs, trout or wild-caught salmon.
