Wild Garlic & Pumpkin Seed Pesto

A must-have in my kitchen! I enjoy adding seeds to pesto, not only for the texture but also for the extra minerals like zinc. Making a large batch is a great idea! You can enjoy this delicious wild garlic & pumpkin seed pesto with pasta, drizzle it over fish dishes, serve it with chicken, or spread it on your favourite bread.

Ingredients:
170g wild garlic
180ml extra virgin olive oil
Juice of 1 lemon
3 garlic cloves
100g pumpkin seeds
50g walnuts
20g pine nuts
½ tsp salt
¼ tsp black pepper
Method: Add everything to a blender and blend until you get a slightly grainy consistency.
Serve stirred through pasta with:
~20g grated cheese (I love goat gouda—it tastes like parmesan)
A dollop of goat’s yoghurt for creaminess
Cooked greens like kale or cavolo nero.
You can keep this in the fridge for up to a week—or freeze it for later.
