A delicious fibre-rich chocolatey snack you will love.
I am always trying to add fibre, antioxidants and flavour wherever possible, and these Red Kidney Bean, Cacao & Buckwheat Bars really ticks those boxes. These bars are also great for toddlers, as they're low in sugar, and they went down a treat with my boys.
Don't be put off by the kidney beans; they give the most delicious texture when mixed with the cacao and the crunch from the Buckwheat. Baking with beans and other vegetables can be a brilliant way to add more to your or your family's day.
I also added my favourite prebiotic supplement, Bio Me PHGG, from Invivo Healthcare. This is a brilliant product for supporting regular bowel movements, increasing the diversity of the good gut bugs, and supporting healthy hormone function.
Ingredients:
170g of Buckwheat
165g of dates (add more if you want a sweeter taste)
60g of coconut oil, melted
30g cacao powder
3 tbsp of Bio Me PHGG
150g of Buckwheat groats, washed, raw.
50g of Linwoods Mix, Flaxseed, Sunflower, Pumpkin & Chia Seeds & Goji Berries
Method
Prepare a loaf tin with parchment paper.
Add all ingredients to a bowl and mix to form a thick batter.
Spread the mixture onto the baking sheet covered with parchment paper and press down to a uniform thickness.
Chill at least 1 hour. in the freezer
Remove from pan and cut the bars.
Store in the fridge (or freezer).
