Crunchy Omega-Rich Granola

If you are a granola lover, then this recipe granola recipe is for you. Packed with protein, fibre and healthy fats, it is a great alternative to shop-brought granola!


What is my problem with shop-bought granola? It contains a lot of unnecessary sugars, making your breakfast choice a sugar/carb-rich meal, which will most likely send your blood sugar levels soaring and your hormones haywire!

Making your own granola is so easy, and it really does not take long, but the ingredients do matter. For breakfast granola, I like using nuts and seeds for their omega-3s and because they're a wonderful source of B vitamins, Zinc, iron, and magnesium. Buckwheat, along with oats, is great for boosting the protein and fibre content.


Ingredient:

  • 200g of organic buckwheat groats - washed and drained

  • 200g organic oats

  • 50g of sesame seeds

  • 50g of linwoods shelled hemp seeds

  • 40g of organic coconut flakes

  • 30g of organic chia seeds

  • large pinch of salt

  • 150ml of maple syrup

  • 55g of melted coconut

  • 3tsp almond butter


Method:

  1. Heat the oven to 180 degrees.

  2. Line a baking dish with some parchment paper.

  3. Melt the coconut butter on the hob on low heat.

  4. Add all the ingredients to a bowl and mix with the melted coconut butter.

  5. Spread the mix on to the parchment paper and place in to the over for 45 minutes, turning half way through. You want the mix to be golden brown. It may appear soft but it will harden as it cools.

  6. Once it is done, let it cool before placing it into a kilner jar.


How do I enjoy this?

I love enjoying this omega-rich granola with some creamy goats yoghurt and grapefruit/berries. Its also delcious spinkled over my moring eggs, or enjoyed as a snack on its own.
